Elimination and Food Challenge Test This test is based on the reactions of two closely spaced feedings after a period of avoidance of at least 4 ½ days. During the period of avoidance it is common to have withdrawal symptoms, which usually clear by the end of the third day. Withdrawal symptoms suggest a probable positive reaction. The food to be tested must be eaten at least two times the week before the test. The food to be tested must be eliminated in any way, shape, form, or amount starting Saturday or Sunday before the challenge day. The most common allergic foods are: milk, corn, wheat, sugar beet, soy, egg. The following Saturday or Sunday allow 2 hours for the test. During this time the patient should not be involved with other activities. Sometimes with young children coloring with or reading with them, is allowable, not TV or video games. The first ½ hour is an observation period. Write down any and all symptoms during this time: blowing or stuffy nose, cough, clearing of throat, sneezing, vomiting, diarrhea, abdominal pain or cramps, urinary frequency or urge. Obtain two resting pulse measurements. For the challenge, within a 5 minute period, eat a serving of ONLY the food to be tested. It may only be prepared with salt and filtered water, not bottled water. At 20, 40, and 60 minutes record observations of all symptoms or change in symptoms, and check the pulse. A pulse increase of at least 10 or preferably 15 or more beats per minute indicates a probable sensitivity. If definite symptoms occur or change, the test is positive. If questionable or no symptoms occur, one hour after the initial challenge repeat the challenge, except record the observations only at 30 minutes. If no symptoms occur then have the patient include the test food with the evening meal and watch for delayed symptoms in the evening. Any symptoms may last for up to 72 hours. If these symptoms are severe use an age appropriate laxative and take Alka Seltzer Gold; children should only use one tablet, and people with heart failure or restricted salt intake should consult with their doctor before using.
